Chicken Curry Ingredients for 8 portions
1 chicken (2 2/1 ilbs) 2 dessert spoons coriander ½ dessert spoons chili powder 2 ounces red onion 2 thin slices ginger 3 cardamoms 1 ¼ teaspoons salt 1 ounce cadju 1 dessert spoons rice (roasted) 2 dessert spoons coconut (roasted) 2 teaspoons sweet cumin powder 2 teaspoons cumin powder ½ teaspoon fenugreek 1-2 green chilies 1” rampe 2-3 dessert spoons oil 2 small tomatoes chopped 8-12 ounces 1st and 2nd extracts of coconut milk ½” cinnamon
- Cut the chicken into 8 portions. Chop onions & green chilies. Grind the cadju. Garlic, rice, and roasted coconut, cloves, cardamoms in to fine paste.
- Add all the powdered and ground ingredients, and salt to the chicken and mix well and leave for 15-20 minutes.
- Heat oil in a pan till very hot. Add the rampe and onions and fry till light brown. Add the chicken and toss for 5-7 minutes. Add the coconut milk. Bring to boil and simmer till done.
